Frugal is the last word you’d associate with a rich, gooey brownie, but these brownies are a thrifty treat. Relative to other brownie recipes, these are quite low in butter. They are also chocolate free, that is the chocolateyness comes entirely from cocoa. You’d never tell it was a frugal recipe – dark, treacly, chocolatey, gooey. All the brownie buzzwords.
If it isn’t clear from the photos, these Tahini and halva brownies have the crisp topping and by jove, the underneath hits that sweet spot between fudgey and cakey. Hallelu. They are undeniably rich but the nutty sesame balances the brownie, making them more moreish than most brownies. Without restraint, these hollows legs of mine would be full of halva brownies in no time.
I have always found a chocolate chip cookie a bit overrated. They were always either too bendy, like those 5 for a pound, supermarket bakery cookies that almost bend in half before they snap, or too brittle like a classic pack of Maryland Cookies.
